- Preheat a charcoal grill to two-zone heat, aiming for an overall temperature of around 400°F.
- Prepare the sweet rub by mixing together: 1/4 cup brown sugar, 1 tablespoon kosher salt, 2 teaspoons cracked black pepper, 2 teaspoons smoked paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, and 1/2 teaspoon cayenne pepper. Mix with a fork until combined.
- Season both sides of each pork chop by sprinkling the sweet rub on top and pressing it into the meat to ensure good adhesion.
