Steps

  1. Preheat a charcoal grill to two-zone heat, aiming for an overall temperature of around 400°F.
  2. Prepare the sweet rub by mixing together: 1/4 cup brown sugar, 1 tablespoon kosher salt, 2 teaspoons cracked black pepper, 2 teaspoons smoked paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, and 1/2 teaspoon cayenne pepper. Mix with a fork until combined.
  3. Season both sides of each pork chop by sprinkling the sweet rub on top and pressing it into the meat to ensure good adhesion.
  4. Place the seasoned pork chops over the high-heat side of the grill (with preheated coals) for 2 to 3 minutes per side, keeping the lid open to allow for airflow and caramelization.
  5. Move the pork chops to the indirect heat side of the grill and close the lid. Cook for approximately 5 minutes before flipping.
  6. Continue cooking until an internal temperature reading between 140°F and 145°F is reached.
  7. Remove the pork chops from the grill and let them rest on a platter for 5 to 6 minutes before serving.
