Grilled Sausage Corn and Shrimp Skewers

- corn on the cob
- andouille smoked sausage
- shrimp
- bell pepper
- butter
- garlic cloves
- parsley
- 2 tablespoons extra virgin olive oil

Steps
- Soak wooden skewers in water at least 30 minutes.
- Parboil corn niblets in salted boiling water until halfway cooked.
- Cut bell pepper into skewer-sized chunks. Slice andouille sausage.
- Make basting sauce: melt butter, add minced garlic, parsley, olive oil, salt and pepper.
- Assemble skewers alternating corn, shrimp (threaded through fat end and tail), sausage slices, bell pepper.
- Brush skewers with butter basting sauce.
- Oil grill grates. Preheat pellet grill to 400 degrees F.
- Place skewers on grill and cook about 12 minutes until shrimp are cooked and bell peppers are tender, brushing with butter sauce during cooking.
- Dust with seasoning rub if desired. Serve hot.
