Heartwarming Lentil Soup

Ingredients
- 3-4 cloves Garlic
- 1 large, diced Onion
- 2, diced Carrots
- 2, diced Celery stalks
- 3 small, cubed Potatoes
- 1 cup Red lentils
- 2 tsp Cumin seeds
- 1 tsp Fennel seeds
- 2 tbsp Olive oil
- a generous pinch Saffron
- 1/4 cup Hot water (for saffron)
- 1/2 tsp Chili flakes
- 1 tsp Sweet paprika
- 2 tsp Turmeric
- 2 tsp Salt
- 2 L (8 cups) Water or unsalted veggie stock
- 1/2 cup Vermicelli
- to taste Fresh lemon juice
- for garnish Fresh cilantro
- generous sprinkle Zatar

Steps
- Chop the garlic, onion, carrots, and celery into small pieces.
- Rinse and drain the red lentils, then set aside.
- In a medium stock pot, heat 2 tbsp of olive oil over medium heat.
- Fry the cumin seeds for about 10-15 seconds.
- Add the onions and garlic to sauté for 4-5 minutes.
- Add the carrots and celery and saute for another 4-5 minutes.
- Place a generous pinch of saffron in a small cup with 1/4 cup of hot water and let it soak.
- Stir in the chili flakes, sweet paprika, turmeric, salt, and give the pot a good stir to incorporate the flavors.
- Add the potatoes, red lentils, and the soaked saffron mixture to the pot.
- Give the pot a good stir. Add 2 L (8 cups) of water or unsalted veggie stock.
- Turn the heat up and bring the soup to a boil.
- Once boiling, turn the heat down to medium-low and allow the soup to simmer for about 25 minutes, stirring occasionally.
- Add half a cup of vermicelli to the pot and give it a good stir. Allow the vermicelli to cook for about one minute.
- Turn off the heat.
- Serve the soup generously with fresh lemon juice, fresh cilantro, and a generous sprinkle of Zatar.
