Jamaican Curry Chicken

Ingredients

  • As needed Jamaican Better Pack curry powder

Steps

  1. Wash the chicken pieces with limes to clean and freshen them.
  2. Season the chicken thoroughly using salt, Chief Brand seasoning, all-purpose seasoning, and chicken seasoning.
  3. Add Jamaican Better Pack curry powder and Chief curry powder to the seasoned chicken.
  4. Mix in finely chopped garlic, onion, scallion, thyme, pimento peppers, and Scotch bonnet pepper into the chicken mixture.
  5. Massage the herbs and spices into the chicken pieces until properly coated. Allow the chicken to marinate for about 30 minutes (or cook immediately).
  6. Heat a bit of cooking oil in a pot over medium heat.
  7. Sauté finely chopped garlic, onion, and curry powder in the hot oil until fragrant and toasted ('burning' the curry) to infuse flavor.
  8. Add the well-seasoned chicken pieces to the pot. Mix them thoroughly with the toasted curry grains infused with the sautéed aromatics.
  9. Cover the pot and allow the chicken to cook on low heat, creating its own juices for about 10 minutes.
  10. After 10 minutes of cooking in its own juices, add optional potatoes (if using), fresh thyme, and a whole Scotch bonnet pepper.
  11. Add enough water or liquid to create the desired gravy consistency. Taste and adjust seasonings as needed.
  12. Cover the pot again and allow it to simmer for another 10 minutes (total cooking time of approximately 20-25 minutes).
  13. Serve hot with rice, peas, or other preferred sides.
