Mango Coconut Cookies

- 2 Softened sticks of butter
- 2/3 cup Super fine sugar
- 2 teaspoons Vanilla extract
- 1 Egg yolk
- 2 and 1/4 cups Sifted all-purpose flour
- a pinch Salt
- 1/2 cup Shredded coconut
- just over 1/4 cup Dried mango

Steps
- In a main mixing bowl, cream the two softened sticks of butter and 2/3 cup of super fine sugar together until combined and pale.
- Add 2 teaspoons of vanilla extract and one egg yolk to the mixture, then continue mixing until well incorporated.
- In a separate bowl (or directly into the batter), combine the sifted all-purpose flour, a pinch of salt, shredded coconut, and dried mango.
- Mix the dry ingredients into the wet ingredients until a smooth, slightly crumbly batter is formed.
- Preheat oven to 375°F. Line a cookie sheet with parchment paper.
- Scoop tablespoons of the dough onto the prepared cookie sheet.
- Bake on the middle rack for 12 to 15 minutes until golden brown, or until cooked through.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
