Mango Coconut Cookies

Ingredients

  • 2 Softened sticks of butter
  • 2/3 cup Super fine sugar
  • 2 teaspoons Vanilla extract
  • 1 Egg yolk
  • 2 and 1/4 cups Sifted all-purpose flour
  • a pinch Salt
  • 1/2 cup Shredded coconut
  • just over 1/4 cup Dried mango

Steps

  1. In a main mixing bowl, cream the two softened sticks of butter and 2/3 cup of super fine sugar together until combined and pale.
  2. Add 2 teaspoons of vanilla extract and one egg yolk to the mixture, then continue mixing until well incorporated.
  3. In a separate bowl (or directly into the batter), combine the sifted all-purpose flour, a pinch of salt, shredded coconut, and dried mango.
  4. Mix the dry ingredients into the wet ingredients until a smooth, slightly crumbly batter is formed.
  5. Preheat oven to 375°F. Line a cookie sheet with parchment paper.
  6. Scoop tablespoons of the dough onto the prepared cookie sheet.
  7. Bake on the middle rack for 12 to 15 minutes until golden brown, or until cooked through.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
