- unsalted vegan butter
- brown sugar
- granulated sugar
- milk
- vanilla extract
- flour
- dark chocolate
- baking powder
- baking soda
- salt
- flaky sea salt

Steps
- Add unsalted vegan butter to a saucepan, melt, and brown until grainy solids appear and it has a nutty aroma.
- Add brown sugar and granulated sugar to a bowl.
- Add milk and vanilla extract to the mixture.
- Pour slightly cooled brown butter over the wet ingredients and mix.
- Sift flour, baking powder, baking soda, and salt into the bowl.
- Stir dry ingredients into the wet mixture until partly combined.
- Chop dark chocolate into big chunks and mix into the dough until just combined; do not over-mix.
- Chill the dough for 1 hour.
- Scoop about 2 tablespoons of dough, roll into balls, and place on a lined baking tray with 5 cm between each.
- Optionally press one or two chocolate chunks on top of each cookie.
- Bake one tray at a time on the middle rack at 350°F (180°C) for 13-14 minutes until golden.
- Optionally use an inverted cup to shape cookies into uniform circles while still warm.
- Sprinkle flaky sea salt on top while chocolate is still melted.
- Let cool on tray a few minutes, then transfer to a wire rack.
