- 3/4 cup Milk
- 1 3/4 cup Oil (Vegetable or Olive)
- 1 1/3 cup Flour (Tapioca Flour)
- 1/2 teaspoon Salt
- 1 Large Egg
- 40 grams Parmesan Cheese
- 80 grams Mozzarella Cheese

Steps
- Heat three-quarters of a cup of milk and 1 3/4 cups of oil in a saucepan until it reaches almost boiling, giving the first bubble.
- Turn off the heat. Add the tapioca flour and 1/2 teaspoon of salt to the mixture.
- Mix until well incorporated; let the batter cool for about five minutes.
- Add one large egg on top of the cooled mixture and mix with a rubber spatula or hands until everything is well incorporated, being careful not to overmix since it's gluten-free.
- Stir in 40 grams of Parmesan cheese and 80 grams of mozzarella cheese.
- Line a pan with parchment paper and lightly oil your hands.
- Shape the mixture into balls (approximately 12) as desired.
- Bake at 400 degrees Fahrenheit for 20 minutes, or until golden brown.
