  • 3/4 cup Milk
  • 1 3/4 cup Oil (Vegetable or Olive)
  • 1 1/3 cup Flour (Tapioca Flour)
  • 1/2 teaspoon Salt
  • 1 Large Egg
  • 40 grams Parmesan Cheese
  • 80 grams Mozzarella Cheese

Steps

  1. Heat three-quarters of a cup of milk and 1 3/4 cups of oil in a saucepan until it reaches almost boiling, giving the first bubble.
  2. Turn off the heat. Add the tapioca flour and 1/2 teaspoon of salt to the mixture.
  3. Mix until well incorporated; let the batter cool for about five minutes.
  4. Add one large egg on top of the cooled mixture and mix with a rubber spatula or hands until everything is well incorporated, being careful not to overmix since it's gluten-free.
  5. Stir in 40 grams of Parmesan cheese and 80 grams of mozzarella cheese.
  6. Line a pan with parchment paper and lightly oil your hands.
  7. Shape the mixture into balls (approximately 12) as desired.
  8. Bake at 400 degrees Fahrenheit for 20 minutes, or until golden brown.
