Poor Man's Steak in a Jar

Ingredients
- 1 lb 2 oz Ground beef
- 2 medium White onions
- Chicken bones
- 1 tsp Salt
- about 2 tbsp Olive oil
- 1 tsp per jar Vinegar

Steps
- Finely dice the onions and mix into the ground beef by hand until uniform and paste-like.
- Coat the inside of a canning jar lid with olive oil and press the meat in to shape flat patties about half an inch thick.
- Shape all the patties (about 8 to 9 from this amount of meat).
- Simmer chicken bones in water with a teaspoon of salt and chopped onion for 1 hour to make broth.
- Fry the patties in olive oil for about 10 minutes per side until a golden crust forms.
- Stack the patties snugly in a quart-sized mason jar.
- Wipe the jar rim with a cloth soaked in vinegar.
- Add 1 teaspoon of vinegar per jar to lower the pH.
- Close the lid but not all the way so air can escape.
- Water-bath process for 3 hours at boiling (212F).
- Let the jars cool so the vacuum forms on its own.
