Survival Recipe (Confit Beef & Tripe Sausage)

Ingredients

  • 1 1/2 lb Beef osso buco steak
  • Beef tripe
  • Butter
  • Whole peppercorns
  • Garlic cloves
  • Chopped onion
  • 1 tbsp Salt
  • 2 tbsp Spices
  • Protein wrap (casing)
  • Rendered beef tallow

Steps

  1. Heat the pan with butter, peppercorns, and garlic cloves.
  2. Sear the steak for 2 minutes on each side.
  3. Fry the tripe in butter until golden.
  4. Add chopped onion and simmer.
  5. Wrap the rested steak and let juices redistribute.
  6. Fry the tripe again in the steak pan.
  7. Slice the steak and scoop out the bone marrow.
  8. Blend everything into a smooth paste.
  9. Mix with tripe, salt, and spices.
  10. Pack into casings and double seal with parchment and foil.
  11. Bake at 300F for 45-60 minutes.
  12. Submerge sausages in hot rendered beef tallow in sterilized jars.
  13. Process in a water bath for 2 hours on low heat.
  14. Cool and tighten lids for vacuum sealing.
