Survival Recipe: Beef Sausages

Ingredients
- 3 lb Beef osso buco
- about half a pound Beef liver
- 1 large Red onion
- 5 Garlic cloves
- 1 cup Corn flour
- 2 tbsp Salt
- Black pepper
- 2 lb Pork fat

Steps
- Cut the beef osso buco into small cubes.
- Blend the beef into a fine mince.
- Dice the beef liver and add it to the blender with the onion and garlic.
- Blend into a smooth purple paste.
- Add minced beef to the paste and mix by hand until firm.
- Roll the mixture into a log, then cut into eight equal parts.
- Wrap each piece in parchment paper, followed by aluminum foil.
- Prick each sausage with a needle before baking.
- Bake in the oven for 40 minutes at 375°F.
- Grind pork fat and render over medium heat for 40 minutes.
- Strain the rendered fat to remove particles.
- Cut sausages in half to fit jars.
- Fill jars to ensure meat is submerged, wipe rims with vinegar.
- Use a small stick to release air bubbles, then close lids, but not too tight.
- Place jars in a water bath (water reaching the shoulders) and simmer for 3 hours.
- To serve, place jar in warm water or sun for 5 minutes to melt lard.
