Pork Thai Green Curry

  • pork thinly sliced
  • coconut milk
  • fish sauce
  • brown sugar
  • red pepper
  • green beans
  • baby corn
  • carrots

Steps

  1. Heat the wok and add 2 Tbsp of Thai green curry paste.
  2. Stir the paste in the pan, letting it bubble until its fragrance comes out (about one minute).
  3. Pour in 270 ml of coconut milk and stir to combine.
  4. Add the pork to the mixture and coat with the sauce. Let it bubble for about 5 minutes or until cooked through.
  5. Add all the vegetables at once and stir them into the liquid.
  6. Turn down the heat, cover the pot, and let it simmer for around 10 minutes.
  7. Taste a piece of carrot to check if the vegetables are tender (al dente).
  8. Stir in two teaspoons of brown sugar and two teaspoons of fish sauce.
  9. Taste the sauce and serve immediately.
