Ranch-Style Turkey Chili

Ingredients
- 2 pounds Ground turkey
- 1 large Onion
- 4 cloves Garlic
- 4 Poblano peppers
- to taste Cumin
- about a palm full Ground coriander
- 2 cups Chicken stock
- 1 can Pinto beans (or white/cannellini beans)
- 1 cup Sour cream
- to grate for topping Sharp cheddar cheese
- few dashes Hot sauce

Steps
- Heat a pan over high heat.
- Add the ground turkey and let it brown, not stirring too much until the bottom has a chance to crust up.
- Stir in about a palm full of ground coriander and some smoky cumin.
- Add one large chopped onion and four large chopped garlic cloves.
- Chop up several poblano peppers and add them to the mix.
- Stir in one can of pinto beans (or white/cannellini beans).
- Pour about two cups of chicken stock into the chili.
- Work the sides and bottom of the pot to free any stuck spices from the toasted ingredients.
