Ranch-Style Turkey Chili

Ingredients

  • 2 pounds Ground turkey
  • 1 large Onion
  • 4 cloves Garlic
  • 4 Poblano peppers
  • to taste Cumin
  • about a palm full Ground coriander
  • 2 cups Chicken stock
  • 1 can Pinto beans (or white/cannellini beans)
  • 1 cup Sour cream
  • to grate for topping Sharp cheddar cheese
  • few dashes Hot sauce

Steps

  1. Heat a pan over high heat.
  2. Add the ground turkey and let it brown, not stirring too much until the bottom has a chance to crust up.
  3. Stir in about a palm full of ground coriander and some smoky cumin.
  4. Add one large chopped onion and four large chopped garlic cloves.
  5. Chop up several poblano peppers and add them to the mix.
  6. Stir in one can of pinto beans (or white/cannellini beans).
  7. Pour about two cups of chicken stock into the chili.
  8. Work the sides and bottom of the pot to free any stuck spices from the toasted ingredients.
