Thai Style Chicken Stew (Khao Na Gai)

Ingredients

  • 250g Chicken thighs
  • 2 cloves Chopped garlic
  • 20g Chinese sausage
  • 1/4 cup Chitaki mushrooms
  • chopped Spring onion
  • optional Cucumber
  • 2 tbsp Coriander leaf
  • 2 tbsp Vegetable oil
  • 1.5 cups Water
  • 1 tablespoon Salt
  • 1 tablespoon Soy sauce
  • 1 pinch White pepper powder
  • 1/2 tablespoon Sugar
  • 1 teaspoon Sesame oil
  • 1 1/4 teaspoons Baked soy sauce
  • 1/2 tablespoon Tapioca flour
  • 2 tbsp Water (for slurry)

Steps

  1. Add the chicken skin to a pot and fry until it gets aroma.
  2. Add garlic and fry together until fragrant.
  3. Add chicken meat and fry until starting to cook, then remove the chicken.
  4. Add 1.5 cups of water, salt (1 tbsp), soy sauce (1 tbsp), white pepper powder (1 pinch), and sugar (1/2 tbsp).
  5. Add chitaki mushrooms and sesame oil (1 tsp) and baked soy sauce (1 1/4 tsp).
  6. Simmer on low heat until the chicken meat is cooked through.
  7. In a separate bowl, mix tapioca flour (1/2 tbsp) with water (2 tbsp) to create a slurry.
  8. Add the tapioca slurry to the stew and continue cooking until it thickens.
  9. Add Chinese sausage. Fry or simmer on low heat with water until the water dissolves and fat from the sausage comes out, then continue frying on low heat until nicely colored.
