Sweet Chili Dipping Sauce

Ingredients

  • 2 Medium or mild spiciness chili (e.g., long pepper)
  • 2 Thai chilies
  • lots Garlic
  • some amount White vinegar
  • a little bit Sugar
  • to season Salt

Steps

  1. Chop the medium or mild spiciness chilies into small pieces.
  2. In a blender, combine the chopped chilies with just enough water to get started.
  3. Add the Thai chilies and garlic to the blender.
  4. Blitz the mixture until it has a chunky consistency (not too fine).
  5. Transfer the blended chili-garlic mixture into a pot.
  6. Add white vinegar, sugar, and salt to the pot.
  7. Bring the mixture to a simmer and let it cook for about five minutes to allow flavors to combine.
  8. If desired, use a brush with water to remove any burnt bits from the sides of the pot.
  9. To thicken the sauce, add a tapioca or cornstarch slurry (make sure to stir constantly).
  10. Bring the mixture back to a simmer and cook until the starch is fully cooked.
  11. Turn off the heat; the sauce will thicken as it cools.
