- some Mashed potatoes

- 2 Eggs
- as needed Breadcrumbs

Steps
- Flake the cooked saltfish until it becomes very fine.
- Blend the red bell pepper, yellow onion, and parsley in a fruit processor to create a seasoning blend.
- Add mashed potatoes into the flaked saltfish and mix with a fork until well combined.
- Stir in the blended seasoning, garlic powder, turmeric, black pepper, and salt, mixing until everything is well combined.
- In a separate bowl, whisk the two eggs. Add them to the mixture and mix until it looks runny.
- Gradually add breadcrumbs, incorporating them into the batter little by little to achieve a nice dewy texture and prevent chunks of breadcrumbs from forming.
- Using a tablespoon, scoop out some of the batter and form balls (or oval shapes), ensuring they are all about the same size.
- Roll each formed ball in more breadcrumbs to lightly coat them for frying.
- Place the coated saltfish balls on a tray and freeze them for about 15 minutes to help them firm up.
- Heat oil in a pan over medium heat, ensuring there is space between the balls when placing them in the hot oil.
- Carefully place the frozen balls into the hot oil one by one. Do not overcrowd the pan.
