Steps
- Preheat your oven to 400°F.
- In a bowl, combine the garlic powder, onion powder, lemon pepper, dried thyme leaves, cayenne pepper, ground cumin, paprika, and light brown sugar to create the seasoning mix.
- Remove excess fat and skin from the chicken pieces, leaving only the desired amount of skin.
- Place the prepared chicken into a baking dish.
- Drizzle about 1 1/2 tablespoons of melted butter (or olive oil) over the chicken and ensure all pieces are coated.
- Salt each piece of chicken individually.
- Season every piece of chicken thoroughly with the seasoning mix, making sure to rub it in well under the skin as well.
- Arrange the chicken in the baking dish, placing the thighs skin-side down (so they will be flipped later) and the drumsticks around them.
- Place the dish in the center rack of the oven for 40 minutes.
- After 20 minutes, carefully flip the chicken pieces over to ensure even cooking.
- Once the full 40 minutes are complete, set the oven to broil and cook the chicken for 2 to 3 minutes until it has a nice crispy top. Keep an eye on it so it does not burn.
- Remove the dish from the oven and let the baked chicken rest for about 5 minutes before serving.
