Sheet Pan Shrimp and Chicken Fajitas

Ingredients

  • 1 Yellow onion
  • 1 Red pepper
  • 1 Green pepper
  • 1 tablespoon Chili powder
  • 1 1/2 teaspoons Paprika
  • 1 1/2 teaspoons Cumin
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Garlic powder
  • 1/4 cup Dried oregano
  • 1/4 cup Cayenne pepper
  • as needed Minced garlic
  • to taste Salt and pepper
  • as needed Chicken breast
  • as needed Shrimp
  • as needed Olive oil
  • as needed Fresh cilantro
  • 1 Lime

Steps

  1. Preheat your oven to 425 degrees.
  2. Spray a sheet pan with Pam spray.
  3. In a bowl, combine the yellow onion, red pepper, and green pepper. Sprinkle half of the fajita seasoning over the vegetables and toss them together.
  4. In a separate bowl, cut the chicken breast into thin strips or pieces.
  5. Sprinkle some salt and pepper over the chicken and mix well with a little bit of the remaining fajita seasoning.
  6. Season the shrimp separately using Creole seasoning (or your preferred seasoning).
  7. Spread the seasoned vegetables on one side of the sheet pan, ensuring they are spread out evenly.
  8. Place the seasoned chicken strips in the center of the sheet pan, spreading them out so they do not overlap.
  9. Arrange the seasoned shrimp around the chicken and vegetables, making sure they are also spread out evenly.
  10. Drizzle olive oil over all the ingredients on the sheet pan.
  11. Bake for 15 to 20 minutes, or until the chicken and shrimp are cooked through. (The cook used a total of 25 minutes at 425 degrees.)
  12. Once finished, remove the sheet pan from the oven.
  13. Garnish with fresh cilantro and squeeze lime juice over the dish before serving.
