Slow Cooker Thai Peanut Chicken

  • some Red pepper
  • some Yellow pepper
  • 1 Onion
  • as needed Chunky peanut butter
  • some Lime juice
  • some Low sodium soy sauce (or regular soy sauce)
  • some Hot chicken stock
  • a dollop Honey
  • as needed Chicken

Steps

  1. Cut up some red and yellow peppers and an onion, then place them at the bottom of the slow cooker to create a barrier.
  2. In a bowl (or directly in the slow cooker), mix chunky peanut butter with lime juice, low sodium soy sauce, hot chicken stock, and honey until the sauce is combined. Do not worry if it is not completely blended.
  3. Place the chicken on top of the vegetables.
  4. Pour the prepared peanut sauce over the chicken.
  5. Turn the slow cooker to high and cook for 3-4 hours.
