Spicy Pork with Rice

Ingredients

  • 2 lbs (900g) Pork
  • 1 tbs Chili powder
  • 1 tsp Cumin powder
  • 1/2 tsp Black pepper
  • to taste Salt
  • 1/2 tsp Mexican oregano
  • 1/2 tsp Chipotle chili powder
  • about 1 tbs Lemon juice (from 1/2 lemon)
  • 3 cups Rice
  • 1 tsp Cooking oil
  • 1 can (14.5 oz) or 411g) Diced tomatoes
  • 6 cloves, sliced Garlic
  • 1, sliced Large onion
  • 1, sliced Green bell pepper
  • 1, cut into small cubes Apple
  • 1.5-2 cups Water (for rice)
  • some chopped Cilantro
  • a little Lemon juice

Steps

  1. Mix the pork with chili powder, cumin powder, black pepper, salt to taste, Mexican oregano, chipotle chili powder, and lemon juice. Set aside for 20 minutes.
  2. Wash the rice well and soak it for 15 minutes.
  3. Heat cooking oil in a pot. Add the marinated pork and cook until almost done (about 10 minutes).
  4. Add diced tomatoes, sliced garlic, large onion, green bell pepper, and apple cubes to the pot.
  5. Add soaked rice along with 1.5-2 cups of water (taking into account any juice already in the pan). Ensure sufficient water depending on your type of rice; Basmati is recommended.
  6. Cover the pot and cook under low heat for 20 minutes.
  7. After 20 minutes, check if the rice is cooked. If it's still undercooked, add 1/2 cup of hot water and continue cooking for another 5 minutes.
  8. Stir in chopped cilantro and squeeze a little lemon juice before serving.
