Turkey Corn Chili

Ingredients

  • as desired Peppers (various colors)
  • as desired Onions
  • 1 Jalapeño pepper
  • additional amount as needed Ground turkey
  • a few left over from crud tray Green peppers
  • about a palmful Chili powder
  • half a palmful Cumin
  • a few drops Hot sauce or cayenne pepper sauce (optional)
  • 2 cups Chicken stock or turkey broth
  • one can and a big can Crushed tomatoes

Steps

  1. Preheat a pot over medium to medium-high heat.
  2. Add oil to the bottom of the pot.
  3. Chop peppers, onions, and jalapeño (removing seeds from the jalapeño for less heat).
  4. Sauté the chopped vegetables in the hot oil until they begin to cook.
  5. Add ground turkey and cook it through.
  6. Stir in additional green peppers if using.
  7. Season with chili powder, cumin, optional hot sauce or cayenne pepper sauce, and chicken stock/turkey broth.
  8. Pour in the crushed tomatoes.
  9. Gently stir all ingredients together to combine them (be careful of splattering).
  10. Add corn kernels to the pot.
  11. Season with coarse salt.
