Steps

  1. Prepare the marinade by combining chili, fresh ginger, garlic, pickled garlic, onion powder, garlic powder, white vinegar, soy sauce, sea salt, brown sugar, and water.
  2. Brown the beef short ribs in a pan, seasoning each piece with salt to achieve beautiful caramelization on both sides.
  3. Pour the marinade mixture into the same pan and deglaze it, lifting all of the crusty bits from the bottom.
  4. Place the browned beef pieces into the slow cooker (or braise/roast them in an oven).
  5. Cook the short ribs in the slow cooker for overnight or six hours until they are beautifully fork-tender and falling off the bone.
  6. Transfer the braising liquid to a wider pan and reduce it by simmering for at least ten to fifteen minutes, skimming any excess oil as it reduces, until the sauce is thick and glossy.
  7. Baste each piece of beef with the reduced sauce.
  8. Place the sauced short ribs into a super hot oven for about 10 minutes or until they are charred at the edges.
  9. Serve the finished dish in a bowl, drizzled with extra sauce and garnished with spring onions.
