Bavarian Pork Roast

  • 1 1/4 kilo Pork roast (shoulder cut)
  • As needed for roasting and sauce Dark beer
  • Plenty Salt
  • Plenty Caraway seeds
  • 3 Old carrots
  • As needed Garlic cloves
  • 2 Onions

Steps

  1. Cut the pork roast into little stripes in one direction (not crosswise) to ensure every slice has its own crust.
  2. Rub the meat with salt and caraway seeds all over.
  3. In a pan, sauté the carrots until softened. Add garlic cloves and onions, cooking them as well.
  4. Place the pork roast into the roasting dish along with the vegetables and pig bones (optional).
  5. Pour in the dark beer to cover the meat about two fingers high.
  6. Roast the pork in the oven at 180-190 degrees for at least two hours, adding fluid or more beer every half hour if needed.
  7. After initial roasting, remove the pork and vegetables. Reduce the liquid/sauce by mixing it with some of the carrots and onions.
  8. Return the pork to the oven and switch on the grill (broiler). Watch carefully to ensure the crust becomes crisp without burning.
  9. Slice the roast thinly and serve with a portion of the reduced sauce.
