Beef Stir Fry with Vegetables

Ingredients

  • 1 Brown or yellow onion
  • 1 Red bell pepper (capsicum)
  • 1 Large carrot
  • 300 G Broccolini (or regular broccoli)
  • 1 Spring onion or scallion
  • 5 cloves Garlic
  • 15 G Ginger
  • 100 ml Low sodium soy sauce
  • 40 mL Rice vinegar
  • 70 G Brown sugar
  • 15 mL Toasted sesame oil
  • 1.5 G (optional) Crushed chili flakes
  • 300 G Jasmine rice
  • 500 mL Cold water
  • 30 ml Peanut oil
  • 1 kilo Beef mince (90% lean, 10% fat)

Steps

  1. Prep the onion: Remove both ends, peel, and thinly slice into strips.
  2. Prep the bell pepper: Slice in half through the root. Flatten with your palm to remove excess seeds, then slice into thin strips similar in size to the onion strips.
  3. Prep the carrot: Wash, then grate it using a box grater (or cut into matchstick cuts).
  4. Prep the broccolini: Slice off the tips and cut the rest into even-sized strips.
  5. Prep the spring onion/scallion: Separate the green stem from the white root end. Thinly slice the white root into thin strips for cooking, and slice the green stems on a slight angle to create diamond or oval shapes for garnish.
  6. Prepare the garlic and ginger paste: Run both through a microplane to create pastes; mix them together (or use store-bought pastes).
  7. Make the sauce: In a bowl, whisk together 100 ml of low sodium soy sauce, 40 mL of rice vinegar, 70 G of brown sugar, 15 mL of toasted sesame oil, the garlic and ginger paste, and about 1.5 G of crushed chili flakes (optional). Set aside.
  8. Cook the rice: In a saucepan, add 300 G of washed jasmine rice along with 500 mL of cold water and salt to taste. Bring to a boil, then reduce heat to low, cover, and cook for 12 minutes undisturbed.
  9. Rest the rice: After 12 minutes, turn off the heat, leave the lid on for an additional 6 minutes before removing the lid and fluff with a fork or spatula.
  10. Cook the beef: Heat a large pan over high heat. Add 30 ml of peanut oil until hot. Slide in 1 kilo of beef mince (90% lean), spread evenly, and cook for about 3 minutes to get a golden brown crust.
  11. Brown the beef further: Mix the beef around and continue cooking for another 3 minutes, ensuring it is browned all over (or longer if using higher fat percentage).
  12. Add onion and carrot: Once the beef is browned, add the sliced onion, breaking it up and mixing through. Fry for about 2 minutes to release moisture and develop color.
  13. Add vegetables: Next, add the grated carrot, broccolini/broccoli, bell pepper (capsicum), sea salt flakes to taste, and ground white or cracked black pepper. Mix all together and cook for about 2 minutes until softened but still retaining texture.
  14. Add sauce: Pour in the prepared sauce, making sure to scrape it all into the pan. Mix around and cook for about 3 minutes, allowing the sauce to reduce slightly.
  15. Finish the stir fry: If desired, add sesame seeds now. Test for seasoning and adjust as necessary before removing from heat.
  16. Meal prep/Storage (Optional): Divide the mixture by five portions into containers. Top with leftover spring onion or toasted sesame seeds if desired.
