Broccoli Pasta

- as needed Pasta
- some Purple sprouting broccoli
- some Regular broccoli
- grated/rind Parmesan cheese
- 1-2 Dry chillies
- a couple Garlic cloves
- 4-5 Anchovy fillets
- some Olive oil (from tin)
- splash/wine glass amount Water
- 4-5 Thyme sprigs
- as needed Cooking water (starchy)

Steps
- Grate the Parmesan cheese using a food processor or fine grater.
- In a pan, heat olive oil and add the broccoli stalks, dry chillies, garlic cloves, anchovy fillets, salt, pepper, and thyme sprigs. Cook for 3 to 4 minutes until softened.
- Add a splash of water (about one wine glass) to the pan and let it simmer; this will soften the ingredients and allow them to fry again later.
- Cook the pasta according to package directions (approx. 12-14 minutes).
- While the pasta cooks, prepare the broccoli: remove the woody ends of the purple sprouting broccoli and cut off the flowers from the regular broccoli.
- Add both types of prepared broccoli to a colander filled with hot pasta water at the last minute.
- Drain the cooked pasta. Return it to the pan with the sauce mixture (broccoli, garlic, anchovies, etc.).
- Stir in some starchy cooking water and grated Parmesan cheese until the sauce is creamy and smooth; add more water if necessary.
- Season with a little pepper and olive oil before serving.
