Steps

  1. Grate the Parmesan cheese using a food processor or fine grater.
  2. In a pan, heat olive oil and add the broccoli stalks, dry chillies, garlic cloves, anchovy fillets, salt, pepper, and thyme sprigs. Cook for 3 to 4 minutes until softened.
  3. Add a splash of water (about one wine glass) to the pan and let it simmer; this will soften the ingredients and allow them to fry again later.
  4. Cook the pasta according to package directions (approx. 12-14 minutes).
  5. While the pasta cooks, prepare the broccoli: remove the woody ends of the purple sprouting broccoli and cut off the flowers from the regular broccoli.
  6. Add both types of prepared broccoli to a colander filled with hot pasta water at the last minute.
  7. Drain the cooked pasta. Return it to the pan with the sauce mixture (broccoli, garlic, anchovies, etc.).
  8. Stir in some starchy cooking water and grated Parmesan cheese until the sauce is creamy and smooth; add more water if necessary.
  9. Season with a little pepper and olive oil before serving.
