Chicken Pot Pasta

Ingredients

  • a little Butter
  • 1 Onion
  • a little bit Garlic
  • a couple tablespoons Flour
  • combination of chicken stock and heavy cream Chicken stock

  • a little bit Salt
  • a little bit Pepper

  • couple cups Cooked chicken
  • 10-oz bag Frozen mixed veggies

Steps

  1. Melt a little butter in a skillet.
  2. Add the onion and cook until softened.
  3. Add garlic to the melted butter and cook for about one minute until fragrant.
  4. Whisk in a couple tablespoons of flour, letting it cook for about one minute.
  5. Pour in the combination of chicken stock and heavy cream. Stir well to ensure there are no clumps of flour.
  6. Add seasonings: salt, pepper, and fresh thyme.
  7. Bring the mixture up to a simmer and add the pasta.
  8. Reduce the heat slightly so it is not at a rolling boil. Cook, stirring occasionally, until the pasta is tender and the sauce has thickened and become creamy (add more liquid if necessary).
  9. Add the cooked chicken and frozen mixed veggies.
  10. Cook for another 5 minutes to bring everything back up to temperature; check if additional cream is desired at this point.
  11. Stir in Parmesan cheese, checking seasonings (salt and pepper) as needed.
  12. Garnish with more cheese and chopped parsley.
