Steps
- Melt a little butter in a skillet.
- Add the onion and cook until softened.
- Add garlic to the melted butter and cook for about one minute until fragrant.
- Whisk in a couple tablespoons of flour, letting it cook for about one minute.
- Pour in the combination of chicken stock and heavy cream. Stir well to ensure there are no clumps of flour.
- Add seasonings: salt, pepper, and fresh thyme.
- Bring the mixture up to a simmer and add the pasta.
- Reduce the heat slightly so it is not at a rolling boil. Cook, stirring occasionally, until the pasta is tender and the sauce has thickened and become creamy (add more liquid if necessary).
- Add the cooked chicken and frozen mixed veggies.
- Cook for another 5 minutes to bring everything back up to temperature; check if additional cream is desired at this point.
- Stir in Parmesan cheese, checking seasonings (salt and pepper) as needed.
- Garnish with more cheese and chopped parsley.
