Easy Mexican Rice

Ingredients

  • 1 1/2 cups rice
  • 4 oz tomato sauce
  • 3 cups plus 2 Tbsp water
  • oil
  • chicken bouillon
  • tomato bouillon
  • garlic powder
  • onion powder
  • ground cumin
  • 1 chile serrano or jalapeno

Steps

  1. Heat enough oil to cover the bottom of the pan over medium-high heat.
  2. Add 1 1/2 cups rice and fry, stirring, for about 5 minutes until golden.
  3. Add 4 oz tomato sauce and mix.
  4. Add 3 cups plus 2 Tbsp water and season with tomato bouillon, chicken bouillon, garlic powder, onion powder, and ground cumin. Mix and bring to a simmer.
  5. Taste the broth and adjust seasoning.
  6. Add one whole chile serrano or jalapeno (optional).
  7. Reduce heat to lowest, cover, and cook for about 25 minutes until all liquid evaporates.
  8. Turn off heat and let rest 5-10 minutes.
  9. Fluff rice and serve.
