Fiesta Chicken Casserole

- 12 cups Cooked shredded chicken
- 1 cup per pan Instant rice (uncooked)
- 10 oz can per pan Diced tomatoes with green chilies
- 10 oz can per pan Cream of chicken soup
- 2 tablespoons per pan Taco seasoning
- half a cup per pan Frozen corn
- 3 cans total / 1 can per pan Black beans (drained and rinsed)
- 3 tablespoons per pan Milk
- 1 cup per pan Fiesta blend cheese
- half a cup Cheese for topping

Steps
- Spray three aluminum pans with non-stick spray.
- Evenly distribute the shredded chicken in each of the pans.
- Add one cup of uncooked instant rice to each pan.
- Add a 10 oz can of diced tomatoes with green chilies (Rotel) to each pan.
- Add a 10 oz can of cream of chicken soup to each pan.
- Add about 2 tablespoons of taco seasoning to each pan.
- Add half a cup of frozen corn or drained canned corn to each pan.
- Add the drained and rinsed black beans to each pan.
- Pour 3 tablespoons of milk into each pan.
- Stir everything in each pan until combined.
- Add one cup of fiesta blend cheese to each pan.
- Sprinkle half a cup more cheese over the top of each pan and spread it out.
- Label the pans with cooking time and instructions.
- Cover the pans tightly with plastic wrap, ensuring it does not stick to the cheese.
- Place the labeled pans in the freezer (do not stack them).
- To bake: Remove all plastic wrap and place foil on top of each pan.
- Bake in a preheated oven at 350°F for 60 minutes, covered with foil.
- Uncover the pans and bake for an additional 10 minutes or until everything is heated through.
