Steps
- Pat fish fillets dry with paper towels; handle gently.
- Season fillets with Creole Kick and optional cayenne.
- Make batter: mix flour, Creole Kick, and seltzer water (or beer) to a pancake-batter consistency.
- Heat oil in a wok or deep pan to about 330-332 degrees F.
- Dip each fillet in the wet batter, then dredge in seasoned flour (wet-dry method).
- Carefully lower fillets into hot oil, waving across the surface before laying down; fry until golden and cooked through.
- Remove and drain on a cooling rack.
- Make tartar sauce: whisk together mayonnaise, capers, horseradish, sweet relish, lemon juice, salt, black pepper, Creole mustard, and Creole Kick.
- Toast buns.
- Spread tartar sauce on both bun halves.
- Place fried fillet on the bun, top with a slice of cheese and pickles, and serve.
