Seafood Fried Rice

Ingredients

  • 4 cups day-old rice
  • shrimp
  • 1 lb lump crab meat
  • frozen peas and carrots
  • green onions
  • onion
  • bell pepper
  • garlic cloves
  • fresh ginger
  • eggs
  • soy sauce
  • butter
  • extra virgin olive oil

Steps

  1. Prepare day-old rice by leaving uncovered to dry out as much as possible.
  2. Make marinade with Asian seasonings and marinate shrimp and crab meat; refrigerate until ready.
  3. Dice onion and bell pepper to carrot size. Mince green onions, garlic, and ginger.
  4. Heat olive oil and butter on a griddle with two heat zones (high side and low side).
  5. Cook shrimp flat on the hot side 2 minutes, flip once, cook until just done. Move to cool side.
  6. Add onions to hot side, then garlic and ginger, saute about 20 seconds.
  7. Add frozen peas and carrots, cook about 1 minute, then move to cool side.
  8. Scramble eggs on the griddle, chop as they set.
  9. Add day-old rice with butter, break up clumps and mix everything together.
  10. Turn burners to high, add soy sauce and remaining marinade ingredients, toss to combine.
  11. Fold in crab meat and shrimp as the final step, stir gently to incorporate.
  12. Serve immediately.
