Smash Burger

Ingredients

  • 3-4 oz per patty ground beef (80/20)
  • salt
  • fresh black cracked pepper
  • burger rub or barbecue rub
  • cheese
  • hamburger buns
  • mayonnaise (for toasting buns)
  • ketchup
  • mayonnaise (for burger sauce)
  • relish
  • mustard
  • Worcestershire sauce
  • pickles
  • bacon (optional)

Steps

  1. Form ground beef into 3-4 oz balls without overworking the meat.
  2. Spread mayo on bun halves and toast on a hot cast iron skillet until golden.
  3. Heat cast iron skillet over high heat.
  4. Place beef balls on hot skillet and let sit 20-25 seconds before pressing.
  5. Press balls flat with a burger press to form thin patties with a crust.
  6. Season top side with salt, pepper, and burger/barbecue rub.
  7. Flip patties and add cheese. Cook until melted.
  8. Make burger sauce: mix ketchup, mayo, relish, mustard, Worcestershire sauce.
  9. Spread burger sauce generously on both bun halves.
  10. Assemble burger with patty, pickles, and optional bacon. Serve immediately.
