- 3-4 oz per patty ground beef (80/20)
- salt
- fresh black cracked pepper
- burger rub or barbecue rub
- cheese
- hamburger buns
- mayonnaise (for toasting buns)
- ketchup
- mayonnaise (for burger sauce)
- relish
- mustard
- Worcestershire sauce
- pickles
- bacon (optional)

Steps
- Form ground beef into 3-4 oz balls without overworking the meat.
- Spread mayo on bun halves and toast on a hot cast iron skillet until golden.
- Heat cast iron skillet over high heat.
- Place beef balls on hot skillet and let sit 20-25 seconds before pressing.
- Press balls flat with a burger press to form thin patties with a crust.
- Season top side with salt, pepper, and burger/barbecue rub.
- Flip patties and add cheese. Cook until melted.
- Make burger sauce: mix ketchup, mayo, relish, mustard, Worcestershire sauce.
- Spread burger sauce generously on both bun halves.
- Assemble burger with patty, pickles, and optional bacon. Serve immediately.
