Bayou Baked Shrimp Spud

Ingredients

  • large baking potatoes
  • extra virgin olive oil
  • bacon sea salt
  • shrimp (tails removed)
  • Kerrygold butter
  • Creole seasoning (Creole Kick)
  • garlic powder
  • onion powder
  • smoked paprika
  • fresh cracked black pepper
  • flour
  • heavy whipping cream
  • 1 cup shredded cheese
  • bacon bits
  • sour cream
  • chives

Steps

  1. Wash and dry baking potatoes.
  2. Pierce top of each potato with a fork along an imaginary line.
  3. Rub potatoes with extra virgin olive oil and season with bacon sea salt.
  4. Bake at 350°F for 1 hour 15 minutes (or 400°F for 1 hour).
  5. While potatoes bake, season shrimp with Creole seasoning, garlic, onion, smoked paprika, and black pepper; let dry marinade penetrate.
  6. Melt Kerrygold butter in a pan on medium-low with a drizzle of olive oil.
  7. Saute seasoned shrimp until just curled and pink; do not overcook.
  8. Remove shrimp and set aside.
  9. In same pan, melt more Kerrygold butter on medium heat.
  10. Whisk in a small amount of flour and cook 1 minute until foamy.
  11. Gradually add heavy whipping cream, whisking constantly.
  12. Reduce heat to low, add remaining seasonings.
  13. Turn off heat and stir in shredded cheese gradually until melted and smooth.
  14. Open baked potato, fluff interior, add a tablespoon of butter.
  15. Top with sauteed shrimp, cheese sauce, bacon bits, sour cream, chives, and bacon sea salt.
  16. Serve immediately.
