Steps
- Cut the beef into smaller chunks, slicing against the grain for tenderness.
- Pop the beef in the freezer for about an hour to firm it up for thin slicing (aim for 2-3 mm thickness).
- Mix seasonings (sugar, salt, MSG) with ice water until well combined.
- Pour the seasoning mixture over the sliced beef and mix until sticky. Repeat this process by adding ice water in four to five batches, mixing until the beef feels sticky again each time, until it becomes very hydrated and has a shiny reflective surface.
- Add the egg white and mix it in evenly.
- Add the corn starch and ensure it coats the beef evenly; do not overmix.
- Cover the bowl with plastic wrap and let the marinated beef rest for 30 minutes.
- Heat some cooking oil in a pan.
- Sear the marinated beef on both sides until the surface changes color, cooking to about medium well (70-80% done).
- Remove the cooked beef from the pan and set it aside to drain.
- Add the ginger slices to the same pan and let them cook until fragrant.
- Add the garlic slices and the white part of the green onions; stir fry until everything smells amazing.
- Add the cooked beef back into the pan.
- In a separate bowl, combine soy sauce, sugar, white pepper, dark soy sauce, shaing wine, and oyster sauce. Add some water and cornstarch to this mixture and mix until smooth.
- Pour the prepared sauce over the beef in the pan.
- Turn the heat up to high and stir fry quickly, ensuring every piece of beef is coated in the sauce.
