Thai Coconut Green Curry Salmon

  • Salmon fillets
  • Bell peppers (red)
  • Sweet onion
  • Scallions (white parts and green parts)
  • Thai green curry paste
  • Coconut milk (full fat)
  • Lime
  • Fresh ginger
  • Oil
  • Jasmine rice
  • Cilantro

Steps

  1. Season the salmon fillets.
  2. Heat a pan over medium-high heat with a little oil.
  3. Place the salmon in the pan, laying it away from you to prevent splatter, and allow it to cook until the edges start to turn color (medium-rare or desired doneness).
  4. Once cooked, set the salmon aside.
  5. Add the bell peppers to the pan first, allowing them to sauté for a little extra time.
  6. Add the onions and then the white parts of the scallions to the pan.
  7. Season the vegetables well and allow them to cook until they have some bite but are not mushy.
  8. Stir in the store-bought Thai green curry paste, full can of coconut milk, a squeeze of lime, fresh ginger, and the green parts of the scallions.
  9. Pour the sauce over the cooked salmon or add the salmon back into the pan to warm it up with the sauce.
  10. Serve alongside jasmine rice.
  11. Garnish with fresh cilantro.
