Grandma's Meatloaf

Ingredients
- ground beef (85/15)
- onion (diced)
- bell pepper (diced)
- eggs
- milk
- 1 cup Ritz crackers (crushed, binder)
- Worcestershire sauce
- salt
- black pepper
- brown sugar (for sauce)
- ketchup or sweet sauce (for topping)

Steps
- Preheat oven to 350°F.
- Dice onion and bell pepper small.
- In a large bowl, combine ground beef, diced onion, bell pepper, eggs, milk, crushed Ritz crackers, Worcestershire sauce, salt, and pepper.
- Mix just until combined; do not overwork the meat.
- Shape into a loaf on a baking pan.
- Optionally refrigerate 30 minutes to help it hold shape.
- Bake at 350°F for 45 minutes.
- While baking, mix sauce ingredients: brown sugar and sweet/savory ingredients together.
- After 45 minutes, remove meatloaf and brush with sauce using a silicone brush.
- Raise oven temperature to 400°F.
- Return meatloaf to oven and bake another 15 minutes, checking every 5 minutes until top is set.
- Internal temperature should reach 165°F.
- Let cool, then slice thickly with a serrated knife and serve.
