Grandma's Meatloaf

Ingredients

  • ground beef (85/15)
  • onion (diced)
  • bell pepper (diced)
  • eggs
  • milk
  • 1 cup Ritz crackers (crushed, binder)
  • Worcestershire sauce
  • salt
  • black pepper
  • brown sugar (for sauce)
  • ketchup or sweet sauce (for topping)

Steps

  1. Preheat oven to 350°F.
  2. Dice onion and bell pepper small.
  3. In a large bowl, combine ground beef, diced onion, bell pepper, eggs, milk, crushed Ritz crackers, Worcestershire sauce, salt, and pepper.
  4. Mix just until combined; do not overwork the meat.
  5. Shape into a loaf on a baking pan.
  6. Optionally refrigerate 30 minutes to help it hold shape.
  7. Bake at 350°F for 45 minutes.
  8. While baking, mix sauce ingredients: brown sugar and sweet/savory ingredients together.
  9. After 45 minutes, remove meatloaf and brush with sauce using a silicone brush.
  10. Raise oven temperature to 400°F.
  11. Return meatloaf to oven and bake another 15 minutes, checking every 5 minutes until top is set.
  12. Internal temperature should reach 165°F.
  13. Let cool, then slice thickly with a serrated knife and serve.
