- beef plate ribs (dino ribs)
- 2 parts coarse black pepper (16 mesh)
- 1 part kosher salt
- beef rub (heavy meats seasoning)
- yellow mustard (binder)
- grape juice
- apple cider vinegar
- pecan wood pellets

Steps
- Trim loose fat from beef plate ribs, keeping hard fat for moisture.
- Score the meat side to allow seasoning to penetrate.
- Apply yellow mustard as a binder on all sides.
- Season bottom with beef rub, then coat all sides with salt and pepper mixture (2 parts coarse black pepper to 1 part kosher salt).
- Preheat pellet grill to 250°F using pecan pellets.
- Place ribs bone-side down on grill with separation between pieces.
- Smoke for 3 hours without opening the lid.
- After 3 hours, check bark; spritz edges (not top) with equal parts grape juice and apple cider vinegar if dry.
- Continue cooking until probe slides in like butter and meat is very tender.
- Remove ribs and rest on a cooling rack for 45 minutes.
- Slice against the grain and serve.
