- 2 tsp chili powder

- 5 tbsp tomato sauce
- 1 tbsp chipotle sauce
- 1 tbsp cornstarch
- 1/4 cup water
- corn tortillas
- 1 Roma tomato
- 3 tomatillos

- salt or chicken bouillon

- Heat oil over medium-high heat, saute onions a couple minutes.
- Add 1 lb lean ground beef, break down and brown.
- Add small diced potatoes, season with 1 tsp salt, 2 tsp chili powder, black pepper, 1/2 tsp ground cumin, and a little water; cook 5-7 minutes until potatoes are cooked.
- Add 5 tbsp tomato sauce and 1 tbsp chipotle sauce; mix well; taste for salt.
- Mix 1 tbsp cornstarch with 1/4 cup water; add to meat; stir and cook 1 minute until saucy.
- Preheat tortillas; add about 1 tbsp filling to each, fold in half, secure with toothpick.
- Fry tacos in hot oil until golden on both sides; drain on paper towels.
- Make salsa: boil 1 Roma tomato, 3 tomatillos, onion piece, 2 chile serranos, and 5 chile de arbol; blend with 1 garlic clove, cilantro, salt or chicken bouillon, and a little water until smooth.
- Remove toothpicks; serve tacos topped with cheese, lettuce, salsa, and pico de gallo.
