Mexican Pizzas

  • 15 oz tomato sauce
  • 3/4 cup water
  • 2 tbsp vinegar
  • cayenne pepper
  • 2 lbs lean ground beef
  • 2 tsp garlic salt
  • chili powder
  • 1 tsp paprika
  • oregano
  • ground cumin
  • onion powder

  • 2 per pizza flour tortillas
  • refried beans
  • shredded cheese

Steps

  1. Make sauce: combine tomato sauce, water, vinegar, and spices in a saucepan over medium heat. Bring to a simmer, then reduce to low and simmer for 10 minutes.
  2. Brown ground beef in a pan over medium-high heat. Season with garlic salt, chili powder, paprika, oregano, cumin, and onion powder.
  3. Add Roma tomato and onion to the meat. Cook for 5 minutes.
  4. Drain excess grease. Add 2 tbsp of the sauce and 1 tbsp cornstarch dissolved in 1/4 cup water. Cook 1 more minute.
  5. Preheat oven to 350°F. Heat a comal or griddle over medium heat with a little oil.
  6. Poke holes in flour tortillas and lightly fry one side, then flip and fry the other side until golden.
  7. Bake fried tortillas in oven for 5 minutes until crispy.
  8. Assemble: spread refried beans on one crispy tortilla, top with taco meat and cheese, place second tortilla on top.
  9. Add sauce, more cheese, tomatoes, green onion, black olives, and jalapeños on top.
  10. Return to oven until cheese melts.
