Jamaican Bean Stew

Ingredients

  • as desired Beans (various amounts)
  • to taste Curry powder
  • some Carrots
  • some Scallions
  • some Onion
  • some Garlic
  • a little bit Thyme
  • 2 cups Coconut milk
  • couple of cups Hot water
  • some Pumpkin (chopped)
  • a couple Ripe plantain pieces
  • to taste Scotch bonnet pepper
  • as needed Okra (frozen or fresh)

Steps

  1. Put various amounts of beans in an Instant Pot and hit the bean chili mode.
  2. In a pan, sauté curry powder, carrots, scallions, onion, garlic, and thyme until fragrant.
  3. Add two cups of coconut milk to the pan and let it reduce slightly.
  4. Add two cups of hot water and some chopped pumpkin. Let the mixture boil/simmer.
  5. Add a couple of pieces of ripe plantain to help balance the flavors.
  6. Add scotch bonnet pepper (optional, for heat).
  7. Once the sauce is simmering, add your various amounts of beans.
  8. Let the stew simmer until all the beans are fully cooked and the sauce has thickened. The longer it simmers, the better.
  9. Stir in frozen okra (or fresh okra) and let it continue to simmer.
