Jamaican Curry Goat

Ingredients

  • 2.5 to 3 pounds Goat meat
  • A bit Salt
  • Some Jerk seasoning
  • Some All-purpose seasoning
  • Some Goat curry powder
  • Some Jamaican curry powder
  • A blend of chopped onion and garlic Green seasoning (onion and garlic)
  • A few tablespoons full Thyme pimento peppers
  • To taste Scotch bonnet pepper
  • Some Cooking oil
  • Some Chopped garlic
  • Some Onion
  • As needed Hot water
  • Optional amount Carrots
  • Optional amount Potatoes
  • Some Pimento peppers
  • Some Scallion
  • Some Fresh thyme
  • Some (secret ingredient) Coconut milk

Steps

  1. Season the goat meat with salt, jerk seasoning, all-purpose seasoning, goat curry powder, and Jamaican curry powder. Mix in a blend of chopped onion and garlic, thyme pimento peppers, and Scotch bonnet pepper to taste.
  2. Cover the seasoned meat and allow it to marinate for at least one hour.
  3. After about two and a half hours (or when ready), add cooking oil and toast some curry powder in a Dutch pot. Add chopped garlic and onion and cook until fragrant.
  4. Add the marinated goat meat to the Dutch pot with the toasted spices, mixing everything together so the meat can soak up the flavors.
  5. Cover the pot and allow it to simmer on low heat for about five minutes to create its own juice and render down the fat without adding any liquid.
  6. Pour in hot water until the goat meat is covered. Cover the pot and let it cook over the lowest heat for about 45 minutes to an hour, or until the meat is nice and tender.
  7. Add carrots and potatoes (optional) to the pot. Add pimento peppers, scallion, a whole Scotch bonnet pepper, and fresh thyme.
  8. Stir in coconut milk as the final ingredient. Taste and adjust seasoning if needed.
  9. Cover the pot and cook for another 10 minutes until the potatoes are tender.
