Ingredients
- 80/20 ground beef
- mild Italian sausage
- ham steak
- minced garlic
- white onion
- black beans
- cooked white rice
- about 1/2 cup salsa
- cheese (block, freshly grated)
- 2 large flour tortillas

Steps
- Heat pan to medium-high; brown ground beef and Italian sausage together, breaking up with a meat masher.
- Add ham steak to same pan and cook until lightly charred; cube the ham.
- Add minced garlic on top of the meat mixture and let it bloom, then stir in.
- Add diced white onion and sweat down until translucent.
- Drain canned black beans and add to the pan; stir to combine.
- Add cooked rice and salsa; stir and let everything marry together.
- Grate cheese from a block; set aside.
- Warm tortillas on a pan over low heat 10-15 seconds per side until pliable; use two overlapping tortillas for a larger burrito.
- Lay a bed of freshly grated cheese on the tortillas, then pile the hot meat filling on top so the cheese melts underneath.
- Fold in the sides of the tortillas, tuck the ends, and roll tightly.
- Optionally toast the burrito in a skillet. Slice and serve.
