Mexican Ground Beef Pasta Casserole

Ingredients
- 1 lb Pasta (penne)
- 1 lb Ground beef
- about 1/2 White or yellow onion, chopped
- a few Garlic cloves, minced
- 1 can (or about 3/4 cup) Hatch green chili, chopped
- 1 Diced tomatoes, 14 oz can
- 1 Cream of mushroom soup, 10 oz can
- 2 cups total Shredded cheese (Cheddar Jack)
- about 1 cup Sour cream
- to taste Salt and pepper
- to taste Cumin
- enough to coat the bottom of a pot Olive oil

Steps
- Chop the Hatch green chili and garlic.
- Heat olive oil in a large pot over medium-high heat. Add the onions and ground beef, breaking up the meat as it browns.
- Add minced garlic and chopped green chili to the pot with the browned meat and cook for a bit.
- Stir in the can of diced tomatoes (including the juice) and let it simmer briefly.
- Season the mixture with salt, pepper, and cumin. Mix well.
- While the meat mixture simmers, bring a separate pot of water to a boil and add salt.
- Add the pasta to the boiling salted water and cook until al dente.
- In the same pot as the meat mixture, stir in the can of cream of mushroom soup, followed by about 1 cup of sour cream. Mix well.
- Stir in half of the shredded cheese (reserving the rest).
- Drain the cooked pasta and add it to the meat mixture.
- Pour the entire mixture into a greased 9x13 inch baking dish, spreading it out evenly.
- Sprinkle the remaining shredded cheese over the top.
- Bake in a preheated oven at 350°F for about 15 minutes, or until the cheese is melted.
