Parmesan Crusted Chicken and Vegetables

Ingredients

  • 1 1/2 pounds Baby yellow potatoes
  • 1 pound Fresh broccoli
  • 2 tablespoons Olive oil
  • 1/2 tablespoon Salt
  • to taste Black pepper
  • to taste Italian seasoning
  • to taste Garlic powder
  • to taste Onion powder
  • to taste Paprika
  • 2 Large chicken breasts
  • as needed Parmesan cheese
  • as needed Panko bread crumbs

Steps

  1. Line a large sheet pan with parchment paper.
  2. Add 1 1/2 pounds of baby yellow potatoes to the sheet pan and cut them into bite-sized pieces.
  3. Add 1 pound of fresh broccoli, cut into smaller pieces, to the sheet pan.
  4. Drizzle everything with 2 tablespoons of olive oil.
  5. Sprinkle the vegetables with salt, black pepper, Italian seasoning, garlic powder, onion powder, and paprika.
  6. Stir to coat the vegetables in the oil and seasonings.
  7. Make room in the center of the sheet pan for two large chicken breasts and place them there.
  8. Spray the chicken breasts with a little bit of oil spray.
  9. Sprinkle parmesan cheese over the chicken breast, then sprinkle panko bread crumbs on top, patting to ensure it sticks.
  10. Season the top of the chicken with salt, black pepper, paprika, Italian seasoning, onion powder, and garlic powder.
  11. Flip the chicken over and repeat this process on the other side: spray with oil spray, add parmesan cheese, then panko bread crumbs, and season with salt, black pepper, paprika, Italian seasoning, onion powder, and garlic powder.
  12. Bake in a preheated oven at 375 degrees for about 35 minutes or until the chicken is completely cooked through.
