- as needed Fresh orecchiette (or any pasta shape)
- generous amount Olive oil

- as needed Ricotta salata

Steps
- Start by chopping the cherry tomatoes into quarters and placing them in a large bowl.
- Add the fresh garlic to the bowl.
- Season with salt, pepper, olive oil (a generous amount), and fresh basil. Mix well to allow the flavors to combine.
- Bring a pot of water to a boil for the pasta.
- Drop the orecchiette into the boiling water and cook for about 4 minutes until al dente.
- Drain the cooked pasta and add it directly to the bowl with the tomato mixture.
- Mix everything together thoroughly, ensuring all ingredients are well combined.
- Grate the ricotta salata over the pasta. Mix again while the pasta is still warm so the cheese melts slightly into a glossy sauce.
- Serve immediately at room temperature or chill and serve later.
