Pork Chops alla Fiorentina

- 12 ounces Bone-in pork chops
- to taste Salt
- 2 Shallots
- 2 Garlic cloves
- juice of half a lemon Lemon juice
- 1/2 cup Mascarpone cheese
- 5 ounces Baby spinach (or arugula, Swiss chard, kale)

Steps
- Season the pork chops all over with salt.
- Heat a hot pan and add the seasoned pork chops to cook until cooked through (about 5 minutes on each side), or until they reach an internal temperature of 145 degrees. Cook the edges for extra flavor.
- While the pork chops are cooking, prepare the sauce: Slice up two shallots and smash and peel two garlic cloves.
- Lower the heat to medium-low in a separate pan (or use the same one after removing the pork), add the sliced shallots and smashed/peeled garlic, and cook until they slowly soften. Add a little butter for the sauce.
- Add 5 ounces of chopped baby spinach to the pan with the shallots and garlic; season with more salt and let it wilt down for a minute.
- Add half a cup of mascarpone cheese, juice of half a lemon, and a couple tablespoons of water to thin out the sauce. Melt the mascarpone until smooth.
- Taste the sauce and adjust seasoning as needed.
- Place the cooked pork chops on a plate and pour the creamy sauce over them, including any juices from the pork.
