- 1 (8 chops) rack of lamb
- 1/4 cup olive oil
- 3 minced garlic cloves
- 1 tablespoon finely chopped fresh rosemary
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 cup packed mint leaves
- 3 sprigs parsley
- 1, cored and sliced granny smith apple
- 1/3 cup olive oil (for applesauce)
- 1 tablespoon fresh lemon juice

- Make marinade: combine 1/4 cup olive oil, 3 minced garlic cloves, 1 tablespoon fresh rosemary, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
- Separate lamb rack into individual chops by slicing between the bones.
- Add chops to a baking dish, pour marinade over them, coat both sides.
- Marinate in fridge for 30 minutes.
- While marinating, make mint applesauce: blend 1/2 cup mint leaves, 3 sprigs parsley, 1 cored and sliced granny smith apple, 1/3 cup olive oil, and 1 tablespoon fresh lemon juice until smooth.
- Heat outdoor grill or indoor grill pan to medium-high; oil grates.
- Grill lamb chops for 3 minutes per side (internal temp 135°F for medium-rare).
- Remove to serving plate, garnish with rosemary sprigs.
- Serve with mint applesauce.
