Rosemary Grilled Lamb Chops

  • 1 (8 chops) rack of lamb
  • 1/4 cup olive oil
  • 3 minced garlic cloves
  • 1 tablespoon finely chopped fresh rosemary
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup packed mint leaves
  • 3 sprigs parsley
  • 1, cored and sliced granny smith apple
  • 1/3 cup olive oil (for applesauce)
  • 1 tablespoon fresh lemon juice

Steps

  1. Make marinade: combine 1/4 cup olive oil, 3 minced garlic cloves, 1 tablespoon fresh rosemary, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  2. Separate lamb rack into individual chops by slicing between the bones.
  3. Add chops to a baking dish, pour marinade over them, coat both sides.
  4. Marinate in fridge for 30 minutes.
  5. While marinating, make mint applesauce: blend 1/2 cup mint leaves, 3 sprigs parsley, 1 cored and sliced granny smith apple, 1/3 cup olive oil, and 1 tablespoon fresh lemon juice until smooth.
  6. Heat outdoor grill or indoor grill pan to medium-high; oil grates.
  7. Grill lamb chops for 3 minutes per side (internal temp 135°F for medium-rare).
  8. Remove to serving plate, garnish with rosemary sprigs.
  9. Serve with mint applesauce.
