- 12 Andouille sausage
- yellow onion
- yellow bell pepper
- 1 white potatoes or Yukon Gold potatoes
- 12 fresh green beans
- 1 Cajun seasoning
- 0.25 olive oil
- 3 paprika
- 2 kosher salt
- 2 garlic powder
- 1 onion powder
- 1 dried oregano
- 1 dried thyme
- 1 cayenne pepper
- 1 ground black pepper

Steps
- Preheat the oven to 400 degrees Fahrenheit.
- Cut the Andouille sausage into bite-sized pieces and place in a large mixing bowl.
- Slice the yellow onion into chunks about an inch in size.
- Slice the yellow bell pepper into chunks about an inch in size.
- Slice the white potatoes or Yukon Gold potatoes into chunks about three-quarters inch in size.
- Cut the fresh green beans in half if desired.
- In the mixing bowl, add the Cajun seasoning, olive oil, and seasoning ingredients.
- Stir the mixture until well combined.
- Pour the mixture onto a sheet pan.
- Bake for about 30 minutes or until the potatoes are soft when pierced with a fork and the veggies are roasted.
