  • 300 g or about 1 and 1/2 cups Jasmine rice
  • 550 ml Cold water
  • 1 Tbsp Sesame seeds (for toasting)
  • 3 tsp Light or low sodium soy sauce
  • 1 Tbsp Dark soy sauce
  • 2 and 1/2 Tbsp or about 50 g Honey
  • 1 Tbsp Brown sugar (optional)
  • 1 and 1/2 Tbsp Rice wine vinegar
  • 1 Tbsp Shaoxing wine (optional)
  • 180 ml or about 3/4 of a cup Chicken stock
  • 1 tsp or 5 ml Sesame oil
  • 3 cloves Garlic cloves (grated into paste)
  • 15 g or 0.5 oz Peeled ginger (grated into paste)
  • a touch Ground white pepper
  • 2 to 3 depending on size Spring onion/scallion (white root for rice, green stem for garnish)
  • 900 g or 2 lb Chicken thigh (boneless and skinless) or chicken breast
  • 1/4 of a tsp Bicarb soda
  • a small pinch Salt
  • about a tsp Peanut oil or spray oil
