Spicy Grilled Chicken Sandwich

Ingredients

  • 1 package Chicken Thighs
  • 1 can Pickled Jalapeños
  • to taste Fajita Seasoning
  • 1 stick Butter
  • as needed Cholula Hot Sauce
  • 8 Toasted Potato Buns (Martin's)
  • to taste Mayonnaise (Duke's)
  • as desired Sharp Cheese (e.g., Pepper Jack)

Steps

  1. Trim excess fat from the chicken thighs using a sharp knife.
  2. Place the trimmed chicken in a bag along with all of the pickled jalapeños and carrots, then mix thoroughly.
  3. Marinate the chicken for 24 hours (or less time to lower spice level).
  4. Seal the marinated chicken using a vacuum chamber sealer or Ziploc bags.
  5. Remove the chicken from the marinade and lay it out on a board.
  6. Season both sides of the chicken with fajita seasoning (salt, pepper, garlic, onion, citrus).
  7. While the chicken seasons, warm a stick of butter over the grill and mix in Cholula hot sauce.
  8. Grill the seasoned chicken thighs over high heat on a straight charcoal fire or other preferred grill.
  9. Flip and rotate the chicken constantly to ensure even cooking.
  10. Baste the chicken with the melted butter and Cholula hot sauce mixture during grilling.
  11. Once cooked through (at least 165°F internal temperature), pull the chicken off the heat.
  12. Place cheese on top of the cooked chicken and briefly return it to the grill or broiler until the cheese is melted and slightly browned.
  13. Toast the potato buns.
  14. Assemble the sandwich by spreading mayonnaise on the toasted bun, adding the grilled chicken with melted cheese, and serving.
