Ingredients
- 1-2 inch thick ribeye steak
- kosher salt
- black pepper
- avocado oil
- butter
- thyme
- rosemary
- peppercorns
- garlic cloves

Steps
- Season steak generously with kosher salt on both sides, pat in.
- Let sit at room temperature 30-60 minutes.
- Dust lightly with fresh cracked black pepper and pat in.
- Heat a stainless clad or cast iron pan on high heat until very hot - water droplet test: drops should roll around like a ball (Leidenfrost effect).
- Add avocado oil, shimmer until hot and slightly smoking.
- Place steak in pan, press for full contact. Do not touch - it will release when ready.
- Sear 3 minutes, flip, sear another 3 minutes.
- Flip to each side for 30 seconds each.
- Monitor internal temperature: blue rare 115-120F, rare 120-125F, medium rare 130-135F, medium 135-145F, medium well 145-155F, well done 155F+.
- Remove about 5F below target temp.
- Rest on cutting board 5-10 minutes (ideally 10) before slicing.
