Steps
- Heat a pan with garlic butter and let it sear.
- Add onions, garlic, scotch bonnet pepper, red peppers, and green onion to the pot.
- Season the vegetables with fish seasoning, Goya seasoning, Badilla complete seasoning, garlic powder, and scotch bonnet powder seasoning. Ensure everything is coated and spread throughout the pan.
- Pour in hot water until all veggies and the bottom of the pan are covered.
- Add pumpkin, okra, and corn to the pot.
- Season the mixture further with fish seasoning, Goya seasoning, garlic powder, Badilla complete seasoning, and Maggi all-purpose. Stir well so flavors distribute throughout.
- Let the vegetables boil for about 20 minutes until cooked.
- Place the seasoned fish into the pot; it will steam in the liquid along with the vegetables.
- Cover the pot and let the fish steam until done.
- While the fish is steaming, mash green bananas. Add butter to the mashed bananas and mix well.
- Season the mashed bananas lightly with garlic powder and Goya complete seasoning.
- Add a little milk to the mashed bananas and mix thoroughly.
- Plate the steamed fish and serve it alongside the mashed green bananas.
